How to cook Madeleines with orange blossom

  1. Whisk the eggs and the sugar until you get a white paste
  2. Gradually add the flour and the baking powder, then incorporate the butter and the milk
  3. Add the orange blossom water. Let the mixture rest in the refrigerator for 30 min
  4. Pre-heat the oven to 425 F
  5. Pour 1 tbsp of the paste into each well buttered pocket of the madeleines mold
